I know, I know, I should have started this thread earlier, as I need the recipe to work with on Monday.
I am looking for a sugar-free lemon cake recipe, if such a thing exists. As a baker I have searched a lot of recipes sites so far, but nothing yet. A yellow cake recipe would do, as I can always add lemon flavor and lemon zest.
A lemon poundcake would be fine, even a lemon muffin recipe. There are loads of sugar-free recipes out there, but even with all my books I can’t find what I need now. My cooking and baking has not, for the most part, taken heed of special diets. Although I do have a gread sugar-free apple pie recipe.
If all else fails Sweet & Low has a boxed cake mix. But it costs over four times as much as even brand name cake mixes, and I don’t want to spend that if I don’t have to. Recipes with sugar substitutes are fine, not with honey or corn syrup.
lesa, that site is great! I see a couple that might fit. One would need a little tinkering, as it was orange rather than lemon, but that shouldn’t be hard.
Is this a great message board or what?
If anyone else has any suggestions I’m still interested. One thing I’ve learned when recipe hunting, is that there is no end to the sites. You can’t find them all, but having a place like the SDMB to turn to can really help.
I’ve also been thinking of putting together a directory for the library cafe in which I work, of special needs recipe sights. A lot of folks have asked me about them, but I currently don’t know many. Time to do some deeper research I guess.
