Need answer fast cheese curds that make your teeth squeak

So, not being initiated into the mysteries of squeaky cheese, I googled the “why” of the phenomenon and found this:

To understand why cheese curds squeak, we have to take a closer look at the building blocks of cheese: proteins. On a microscopic level, cheese curds are made up of proteins that are bound together with calcium. When you bite into a cheese curd, this protein and calcium structure rubs against the enamel on your teeth, making a squeaking sound.

So, ignorance overcome.

Now I need a road trip north to get some fresh squeaky curds.

So, are there any places that you can buy fish fresh from Lake Michigan? Now, or next summer, or in a year or two?

I know that some whitefish at Schwarz fish in Sheboygan occasionally come from Lake Michigan. I also know that the fishmonger in Naubinway sells whitefish and perch from there too. But I know they both sell the same fish from other locales (Superior, Huron, Great Slave Lake, other Canadian lakes) depending on availability.

I’m sure there are others commercially fishing Lake Michigan these days, but it’s tough to find a list that enumerates exactly who’s doing so. It’s best to ask your local fishmonger where their current catch is coming from, IMHO.
