Need suggestions for something to go with Lasagne on Christmas day

We’re doing a slightly different theme this Christmas - we want to have it so that people don’t have to spend all day cooking, so we’ve decided to make lasagne (which can be made the previous day) and go skiing or something on Christmas morning. When we’re done, we all gather at someone’s house, pop the lasagnes in the oven, and all relax.

Great plan! Except… having been recently diagnosed from diabetes, gorging on high-carb lasagne isn’t my first choice. With that in mind, I’m trying to think of a non-lasagne but still tasty thing to bring for my dish (my siblings are making the lasagnes). Being Christmas, I’ll have a small piece of lasagne, but want to round it out with something a bit better for me - meaning, it has to be low-carb, or (preferably) no-carb.

It has to be a main dish/hearty kind of thing (we’ve already got people bringing salads and such). I’m thinking a hearty soup (minestrone?) or something meat-based.

It also has to be able to be prepared the day before, or (at most) have minimal preparation on Christmas day.

Any suggestions?

Maybe a quiche? It could have either veggies or ham. The crust is carbs, but you can minimize that pretty easily. I would suggest making it in advance and then freezing.

Great idea… but I’m so fookin’ sick of eggs that I can’t even think about quiche. They’re about the only thing I can eat in the morning without my blood sugar going sky high. Sorry, I should have mentioned this in the OP.

No egg dishes!

Vitello tonato - cold cuts of veal smothered in a tuna and anchovy sauce. It is cold though, so may not feel very hearty or christmassy.

Stuffed peppers? Coq au vin?

Eggplant parmigiana… except, instead of breading the eggplant in breadcrumbs, use crushed pork rinds.

(I know this sounds horrifying but trust me, it actually works very well.)

Tossed salad, garlic toast, and a big glass of merlot.

Heh, we’ve got those covered, trust me.

Eggplant Parmigiana is heavenly, but that doesn’t sit overnight well, does it?

Stuffed Peppers: hmm that’s a good one. Will have to think on it.

Coq au Vin: I already was thinking about beef burgundy, very similar. This may be a what I end up doing.

Also thinking of meatballs! Always a crowd pleaser.

Bagna Cauda maybe? **Edit **- Probably not ‘main dish-like’ enough. But it’s just so tasty!

I like to eat it with bread, but it’s often eaten with veggies too.

Here’s a recipe although I make mine a bit differently. I usually use a whole head or two of garlic, and I don’t bother chopping it. I just put everything in a cast iron skillet and let it simmer in the oven for an hour or so, then just before the garlic cloves are all soft, I toss in some chopped parsley and fresh ground pepper.

You could either make it the night before and reheat, or just toss everything together the night before, then the day of let it simmer in the oven like I do.

Of course, it will make standing under the misteltoe pretty interesting. :wink:

Caprese salad?

Yum, I like it too. Of course, nobody but me and Mr. Athena would eat it. “Yuk Anchovies!”

That’s also why I’m not just putting out a big block of pate de foie gras. “Yuk Liver!”

We save those yum yums for the nights we’re alone.

A ham? It can be served cold.

My wife makes a great artichoke dip that’s practically a meal in itself. Would you like the recipe?

What about Italian Wedding Soup? This recipe is without pasta so it’s carb friendly.

Dreamfields makes a pretty good low-carb lasagna noodle. We’re also having lasagna for Christmas eve, made with Dreamfields and accompanied by a veggie tray and fruit salad (1 Type 2 diabetic, 1 metabolic disorder, 1 at-risk/high blood sugar youth).

Sounds like meatballs or sausages might be best for you. Or, you can forgo the noodles entirely and layer with longer slices of cheese or slices of zucchini. Your lasagna’s vertical integrity will suffer, but who care? It’s Christmas.
