You need butter, fine bread crumbs, grated parmesan and chicken breasts.
Melt the butter. Mix bread crumbs and parmesan (I just eyeball it to 1 part parmesan to 3 parts bread crumbs).
Dunk the chicken in the butter, then the bread crumbs and arrange on baking sheet.
Put in oven at 350 for half an hour (or until cooked through). Serve with whatever, we usually do brocolli or squash (or whatever you have on hand) and rice or noodles.
Quick and easy. If you want to make it more like they serve in a restaurant, get one of those jars of spaghetti sauce and when the chicken is almost done pour a little on top and add a slice of mozza and pop back into the oven until the cheese melts. We don’t usually bother with that though.
Get a ham steak (or some Hillshire Farm sausage/kielbasa - whichever - it all takes the same amount of time), some Kraft Macaroni and Cheese (or Velveeta Shells and Cheese - either way), and some frozen broccoli.
Fry up the ham steak (or sausages) in a skillet.
Make the Mac and Cheese, and boil up the broccoli.
Serve.
I’m doing broiled crabcakes (follow the recipe on the back of the Old Bay Seasoning tin), steamed zuchinni (slice it and stick it in the microwave for a few minutes until it’s done. Add salt, pepper and butter.) and corn on the cob.
tilapia fillets
1/4 cup grated parmesan
2 slices bread, or leftover french bread
1/2 tsp poultry seasoning
2 cloves garlic, minced (or 1/2 tsp powder)
1-2 tbs olive oil
Preheat oven to 400°. Place the filets in a shallow baking dish sprayed with cooking spray. Sprinkle with salt and pepper.
In a blender or food processor, process the bread with garlic, parmesan, seasonings and olive oil. Sprinkle over fillets, and bake for 15-20 minutes until fish flakes easily with a fork. (Sometimes I put it under the broiler for a minute to brown the bread crumbs a bit more.) Serve with wild rice and steamed broccoli or asparagus. Or green beans, even.
Get a smoked sausage or polish sausage or something along those lines. Get some olive oil, garlic, potatoes, carrots, onions, other veggies*. (OK, so I don’t know how to cook without onion, but I guess you could just skip it. :D)
Wash the potatoes, pare the carrots, skin the garlic, prep the veggies. Cut 'em up into large pieces, toss 'em in a baking pan, drizzle oil over the top and stir everything around to coat the veggies. Probably want some salt and pepper on there, maybe some italian-seasoning mix or seasoned salt or something.
Cut the sausage into serving-size chunks (3-4") and scatter over the top.
Stick 'em in the oven (probably around 400?) for about an hour. Toss some bread in for the last 10 minutes and make a salad.
Easy peasy and plenty of time to do other stuff around the house while it’s cooking.
*Eggplant, squash, green beans, cabbage, whatever you like. For the softer veggies, wait and add them about halfway through. Stir 'em in, add more oil/seasoning as needed.
Actually I wasn’t able to make it to the store - so we ended up with meatloaf - but tomorrow night I am going to try that sausage thing and I think on Thursday it will be chicken parmisan. I don’t know where to find tilapia
My store has them in the freezer section. They come in individually frozen packages so you can thaw as many as you need. Any mild white fish will do, though, like flounder or cod…
