I’m mildly obsessed with food at the moment, and seem to spend large chunks of my day deciding what to eat. I’ve just decided that dinner tonight shall be pasta and tiger prawns with olive oil, garlic and chilli, with a tomato and basil side salad. It will be scrummy. Crusoe, who’s not a fan of pasta, shall have fish finger sammiches :D.
I’ll probably be fixing one of hubby’s faves (he works out of town during the week, but is home on Friday in time for supper, ready for something home-cooked): Deviled Chicken in the Crock Pot. It’s a pound and a half of boneless, skinless chicken thighs, three Tbsp. butter, six Tbsp. each stone ground spicy mustard and honey, 1/4 tsp. nutmeg, 1/3 tsp. crushed red pepper. Toss it all in the Crock, cook on low for about six hours, stirring a couple of times. Serve with whole-grain fresh baked bread, brown rice, and spring peas with pearl onions and mushrooms.
We meant to eat it last night, but we had a bunch of leftovers so we put it off for a day.
Normally, we would have rice with it, but we’ve had rice twice this week so my wife picked up a nice loaf of bread. We’re also cracking into a desert wine that I bought last summer, and she’s picking up desert, too.
The yellowfin, I’ll just sear with salt & pepper and maybe sesame seeds. Perhaps we’ll also have asparagus. I have left over beurre blanc in the fridge which is good on asparagus.
But tomorrow is what I’m looking forward to: we’re having homemade chili and cornbread waffles while I watch football.
I’m taking advantage of my roommate’s absence to eat mushrooms. We take turns cooking dinner, and she doesn’t like mushrooms, so I don’t get to eat much yummy fungus except when she’s away. Last night I made beef stroganoff, all gourmeted up with portabella mushrooms and strips of steak cooked medium-rare. I even managed to cook the pasta perfectly al dente, which I hardly ever acheive. Oo, it was good.
Well, tonight it will be whatever I can scrounge up at work. But last night was Cajun seasoned 15 bean soup with smoked sausage, and Cornbread muffins. Hubby will eat leftovers tonight.
Fish curry tonight. Dead simple, and should take about half an hour or so to make. I’ll marinate fillets of white fish (either cod, haddock or both) in lime juice and salt for about 10-15 minutes. Whilst the fish is marinating, I’ll peel, and slice a couple of potatoes into 0.5cm-thick slices. I’ll also make a paste consisting of tomato puree, a bit of lemon juice, chili, garam masala (ground Indian spices), and a pinch or two of salt. I’ll then coat the fish in most of the paste, and fry over a medium heat, in a little bit of olive oil, till the fish is done. I’ll then put the fish in an ovenproof dish, and put it into the oven, heated to 200C, whilst I mix the fried potatoes with the rest of the paste, and cook those in the frying pan till the paste is cooked. Then, I’ll pour the potatoes onto the fish, and serve.
Beer can chicken. I haven’t settled on veggies, but I’ve got a couple of leeks in the fridge, so I’m thinking I might grill those while the chicken is resting.
Since said husband will be meeting with friends later tonight I am going to treat myself and go for Chinese. My daughter and I will be feasting on lo mein, steamed dumplings and chicken with mixed vegetables. Yum.
