I’ve been to gun shows in Arkansas, but never bought anything. This weekend I have some money, and may very well purchase something.
How does one pay? Cash, check, credit card? I understand there is a waiting period.
Everyone accepts cash. Some vendors will accept checks, and some will accept credit cards or debit cards.
You are in generally in a better position to negotiate if you use cash. In my experience, everything at a gun show is negotiable.
There’s only a waiting period if you buy a handgun from a dealer. You can buy a handgun from an individual, and most* long guns from dealers or individuals without a waiting period.
*You can’t buy fully automatic weapons or such from anybody unless you both have the licenses to do so.
I don’t know about Arkansas, but in NC, the waiting period is the time for the permit to be processed. Once you have a permit, you can buy a gun that same day, but it takes five days to process the permit application.

At every gun show I’ve attended, if you pay by CC, the dealer is going to add the 3% (or whatever it is) the CC company charges on to your cost.
