Pimento Cheese

Do you like pimento cheese? Me, I like it by itself on sandwiches (toasted or not), or as a spread on ham sandwiches. I also like it as a dip for potato chips. I especially love the pimento cheese made by Nacky where I used to work.

But I haven’t even thought about pimiento cheese in at least a decade.

When I was a kid, my mom used to make me pimiento cheese sandwiches on white toast all the time. Yum! I loved 'em.

It’s a nostalgia food item for me. But I seemed to have forgotten totally about it.

Pimento cheese is definitely a forbidden delight for me.

Have you ever made it? I’ve made it once with extra-sharp cheddar but I couldn’t finish it before it went bad. :frowning:

Did anyone else think pimento were fish when they were young?

Lord, yes, pimenter cheese is the best! Here’s my most favored recipe:

1 LB good white cheddar cheese, grated

Small jar of pimentoes, and here’s the key: whirl them a bit in a food procesor or blender, DON"T DRAIN, so they’re right juicy… pour that mix into the grated cheese. This makes for an exquisite pimento flavor.

A good dash of Worchestershire sauce

A good dash of Tabasco

A generous dash and dash of good bourbon whiskey

Salt and pepper to taste

Mix well and tell me that ya love it!

I forgot a major ingredient…

Mayonnaise to bind, for a pound of cheese, that’d be about 1/4 cup

But–as a person who eats out a lot–any time I’m at a new restaurant that has pimento cheese on the menu, I must try it out for future reference.
