How come you never seem Pistachios in mixed nuts? They are liked by many. But all I ever see is Peanuts, Almonds, Cashews, Hazel Nuts and Brazil Nuts. Maybe once in a while a macadamia.
I see they make “Deluxe” versions of Mixed Nuts but why no pistachios
Perhaps because pistachios are soft and wouldn’t hold up well? A puzzlement, indeed.

The picture on the right on that page is Buddy Squirells Deluxe Nut Mix, it appears to have pistachios in it.

Really? I bought a bag of them at Trader Joes for $3.99/lb & they are crunchy nut meats…dry roasted too. You get so much more value when you just buy the nut meats rather than a whole nut.
Dry roasting takes the moisture out, so they stay crunchie.
