Pot-Luck Help

I have been invited to a pot luck, and, well it is tonight.

I got the invitation on Friday but silly me was away for the weekend and didn’t actually get it until today. Most of my stand-by kick ass recipes take a while to make which I don’t have. I have maybe an hour, I could squeak by with an hour and a half.

Does anybody have some tasty and quick recipe ideas for a pot-luck?

Here’s an extremely tasty salad that’s easy, all prep, no cooking…

1 can hearts of palm (get the salad cut if you can and you save cutting them)
1 can artichoke hearts, quartered
1 cucumber, quartered lengthwise and cut into bite-sized pieces
1 pint cherry or grape tomatoes cut in halves
3 tbsp olive oil
1 tbsp balsamic vinegar
1 clove garlic finely minced or pressed through a garlic press
fresh herbs of your choice. May I recommend basil and tarragon. But whatever you might have. You could also substitute store bought salad dressing if you’re really in a pinch but I much prefer to make my own vinegarette.

Dump it all in a bowl, pour over the oil and vinegar, stir well and refrigerate. The longer it sits the better it is.

You could also add chunks of feta or mozarella cheese and black olives to make it more hearty.

It’s summer so go for Linguine Salad

Takes longer to shop for than to make.

Linguine
Ranch dressing
Mayo…not MW
Can of black sliced olives
Grated Romano cheese
Chopped onions if you like them

cook Linguine, chill ice water, drain
mix = amounts of mayo and ranch, as dry or as wet as you like but remember the Linguine will suck up the dressing unless you coat it in a little oil before you put the dressing on. I like mine to suck up the dressing.
add the rest of the ingredients, toss and go.

Looks a little odd but always a big hit.

Get one head each of different kinds of lettuce, some tomatoes, bell peppers, scallions, mushrooms, shredded carrots, and three different little bottles of salad dressing. Chop everything up for salad but transport them in separate tupperware containers, bring along some extra spoons so people can make their own salad without the parts they don’t like.

Don’t get head, give head. No-one will notice that you didn’t bring a plate.

How about Mexican layered dip?

Can of refried beans of your choice
Sour cream (lite or non-fat is fine)
Packet of taco seasoning
Salsa of your choice
Shredded taco or co-jack cheese
Chips of your choice (Fritos scoops! YUM!)

Mix the taco seasoning packet with the sour cream.

Spread the beans in the bottom of a casserole dish (rectangular with straight sides is good.) Spread seasoned sour cream over the beans. Spread salsa over sour cream. Sprinkle cheese on top of everything. If you want to get fancy-schmancy, sprinkle some chopped scallions, cilantro and/or black olives, too. Serve with chips.

Mom’s Potato Salad

8 medium potatoes (I like red ones)
2 hard boiled eggs, diced
1-2 stalks of celery, finely chopped
½ onion, finely chopped
¼ green pepper, finely chopped
1 small jar diced pimento
1 tablespoon sweet pickle relish
½ teaspoon celery seed
½ teaspoon dried parsley
Salt
Pepper
1 tablespoon yellow mustard
3-4 tablespoons Miracle Whip salad dressing
Dash salad vinegar (optional)
1 teaspoon sugar (optional)
Boil the potatoes (whole, unpeeled) until just done, about 15-20 minutes. Dump them in a colander and cool. Peel and large dice and put in a large bowl. Add eggs, celery, onion, green pepper, pimento (with juice), and relish. Add seasonings to taste. Add mustard, then “some” Miracle Whip. I start with 3-4 tablespoons, then mix it up. If too dry, add a little more. Now taste. If too sweet, add a dash of vinegar. If too tart, add a little sugar. Makes about 6-8 servings.

Great ideas I knew I went to the right place.

Shrimp Salad

1 box of very small macaroni shells (1#)
1 bag of frozen cooked salad shrimp, thawed
1 small onion, diced
2 ribs celery, diced
Mayo
Milk
Diced red pepper if you want it. Sometimes I do, sometimes I don’t.

Cook the shells, drain them, mix everything together with mayo and maybe a T. of milk to give it a good consistency. Put some butter lettuce leaves along side for people to wrap the shrimp salad in to eat.

It’s not exact, but it’s quick and it’s good.

(You could also buy a couple of boxes of Suddenly Salad - Betty Crocker makes it, and the bacon and ranch one is really, really good - but that’s a 2UFamily cop out. :D)

Spinach Artichoke Asparagus Dip

1 block softened cream cheese
1 cup mayo
1 can artichoke hearts, drained
1 can chopped asparagus, drained
1 box frozen chopped spinach, thawed and drained

combine all ingredients and mix well. top with grated parmesan cheese. spread into a shallow baking dish and bake at 350 until heated through and parmesan cheese is browned (usually about 40 min). Serve with raw veggies, crackers, or pita bread.

The mixing takes about fifteen minutes, and then it can cook while you get ready for the party. Very easy.

I find myself feeling ridiculously competitive and thinking “I hope she picked my recipe”. Why yes, I do need to get a life, why do you ask? :rolleyes:

Well I found out that no-one was bringing dessert, so I am sorry to say that I didn’t use any of the recipes. I did however write a bunch down for next time.

I got this recipe from a co-worker and it was a hit
1 c flour
1/4 c powdered sugar
1 cube margarine
8 oz. cream cheese
1/2 c sugar
3 (10 oz pkg.) frozen strawberries
4 T sugar
4 tsp cornstarch

Combine flour and powdered sugar, cut in margarine. Sprinkle evenly over a 12" pizza pan. Press firmly and bake 325° for 15-20 minutes until lightly browned. Cool.

Combine cream cheese and sugar, spread over crust, chill.

Thaw and drain berries; combine 1 c berry juice, sugar and cornstarch, cook until thick. Add berries. Chill and then spread over cheese filling
