Radishes

Wow, that looks good. I’m going to have to try it.

I thought of another one - quick pickled radishes. I like sweet & sour, like this recipe, but you can do almost any quick pickle recipe with radishes. Added bonus: they keep in the fridge for a few weeks, so no need to eat 'em all up fast.

Cook them like you would many other veggies. You should be able to find a number of Indian and Thai recipes that call for radish.

Do an Italian giardiniera - a mix fresh veggies that have been marinated in vinegar for a couple of days. Radishes are great this way. Yum!
