Recipe ideas using hearts of palm?

My wife picked up a 2-pack of giant jars of hearts of palm from Costco the other day, and we still had one big jar left over from a previous shopping trip.

I really like HOP, I can and have eaten them like pickles right out of the jar. And I’m no stranger to using them in recipes-- since they have a similar taste and kind of a similar texture to artichoke hearts (at least to me), I usually use them in place of where I’d use artichokes, like in a white pasta sauce with seafood or chicken. I make a version of chicken piccata with HOP. But that’s about the extent of what I can think to do with them. I know they’re good in various types of salads too, but I’m not a big salad guy.

So, I’m just looking for some inspiration for other types of dishes they’d be good in, to shake things up a little. To get to the heart of the matter, I’d like you guys to palm off your HOP recipes to me (sorry :o).

I use them in salads. That’s about it.

I checked in basically to see if anyone else had any ideas. Maybe that’s what most of the other views were, too?

Treat them like artichoke hearts - salads, soups, deep fried, baked in casserole, never ate them out of a jar plain, but they would be good dipped in salad dressing. Favorite ways are salad, deep fried and cooked in broth as part of our New Years fondue festivities. [favorite ingredients for the chicken broth fondue are hearts of palm, artichoke hearts, baby precooked potatoes, baby precooked onions, chicken cubes, baby bok choy, hearts of chinese cabbage, tofu puffs [the ones you get to deep fry, they are already sort of prefried so they don’t fall apart]

Aruvqan, frying HOP up and/or adding them to soup or broth is something I hadn’t thought of, though I have fried up artichoke hearts for risotto before. Good ideas, thanks!

My brother-in-law made a delicious faux scallop dish with hearts of palm. He sliced them into scallop sized pieces, dredged them in Italian breadcrumbs, sautéed them in olive oil and drizzled fresh lemon over them. Delicious!

Chop hearts into rounds and place in bowl. Add a couple chopped avocados and some home made vinaigrette. A bit of herb like cilantro or basil is nice or some chives but not really necessary.

I’m totally trying the faux scallops idea by the way.

I LOVE the two packs from Costco, it’s always in my pantry.
