Recipes that use up a lot of milk, please?

I’d definitely add the vanilla to the rice pudding… it sounds pretty bland otherwise.

Yes that recipe calls for uncooked rice, though you can easily find recipes for rice pudding using (perhaps leftover) cooked rice.

(I might add that I’ve actually never tried that particular Bittman recipe - though I’ve made stovetop rice pudding from “How to Cook Everything” many times).

If you are using 2% milk, dry rice should be your option. It will soak out the water for a thicker creamier result.
