Red Pepperoncinis

I have a batch of pepperoncinis that I accidentally let get ripe. What should I do with them?

I’m looking for recipes, people!

They would be attractive stuffed with something–cream cheese or goat cheese with herbs and garlic maybe?

Anything you were going to do with them green, you can still do with them red. The flavor will be a little different (mostly, sweeter), but they should still work.

Pickle them
Chop them up and mix with feta cheese and use as a sandwich spread.

I like this idea.
