I’ve got a recipe I’ve been using for Salt & Pepper Calamari for some time which is really nice, and easy to make to boot.
However, I’ve recently started on a new eating plan, which is roughly along the lines of a low carb, low GI diet.
So I’m trying to find a Salt & Pepper Calamari recipe that doesn’t include flour. It seems to me that if you tried to just coat the Calamari in salt & pepper without the flour to ‘cut’ it. You’d get too much of the Salt & Pepper in there.
Can anyone help me out here with a no-flour recipe?
I’d go:
1/4 tsp ground dried red chilli
1/2 tsp ground sichaun pepper
1/2 tsp black pepper
1 tsp salt flakes
2 tbs cornflour
an egg white
half a kilo of squid.
Dip squid in egg white, then in mixed spices. Fry, drain well.
I don’t know how strict you’re going GreedySmurf, but that’s hardly any flour. Are you using more?
My recipe is sort of an eyeball situation but is basically a cup of cornflour, with a tablespoon of salt and tablespoon of pepper. (I’m not a huge fan of chilli myself).
So I had been using a cup of flour. but I might give it a go with just the tbs you mention hawthorne - Cheers.

I use simple quick and easy, one whole egg with a dash of milk & whickit up a bit. Dip the squid, and then coat in the flour and salt and pepper mix in roughly the quantity I mention above.
Have the oil very hot and fry for maybe a minute tops.
And personal preference, I really like using pineapple cut squid rather than rings.
And for the OP, you could try finely crushed pork rinds - I used those for breading more than once when I was low-carbing. It makes for a heavier coating, though - more like panko or bread crumbs than flour.
