I am very familiar with the phrase “scared shitless”, but occasionally have heard someone say “scared spitless”. I encountered that version again this morning in this article from snopes.
I assume that “spit” is simply a euphemism for “shit”. But, fear can result in a dry mouth.
Hmmm I say. Maybe I’m wrong, and the original phrase is “scared spitless”.

I say “shitless.” Born in NJ, living in CA.

I’ve only heard it used when “shitless” would be considered impolite.
Shitless is the common saying around here. I expect spitless is the correct one. You being so scared that your mouth goes dry. People shit themselves when they get badly scared. I suppose it could be scared shit assed.
I have often heard you scared me so bad I nearly shit my pants.
