I’m trying to think of something I saw on Emeril’s show: he layered onions, beans, kielbasa sausage, and some other things into a casserole - tiny quails, for one thing, pieces of rabbit, and then he baked it and it looked like the ultimate Comfort Food, with a crust on top. He recommended some fancy red wine, and a crusty loaf of bread with it. I can’t think of the name. Can anybody tell me what this is called? I’d like to make it myself.

Yep, that might be your best bet. If you have good eyes, you can try to read the lengthy entry on cassoulet from the Larousse Gastronomique. It includes a few recipes, too.
