So I have two cans of Corned Beef. I don’t know what to do with them. I thought maybe someone could share a good breakfast recipe. Something that goes with eggs and hash browns.
Sliced it and fry it leaps to mind.
I sure there are many other ways, but I just woke up. :o <- Yawn
My dad used to love canned corned beef. His favorite was a corned beef omelet that I fixed for him by cubing the corned beef and browning it in a little bit of butter, then preparing an omelet in the usual way and pouring the diced meat and butter on top.
This was back in the days before anyone worried about cholesterol.
Skip the separate hash brown format.
Boil some potatoes the night before and refrigerate. In the morning, saute onions till soft, left hte potatoes build up a slight brown and hack in the canned corned beef. Let it build up a nice crust and serve with poached eggs on top.
Patient people pan fry the eggs in little wells in the hash, but I have to get to the salty goodness sooner so poach separately.
This is also the best way to finish off the Thanksgiving bird on Black Friday morning.
Simple? Dump it out of the can, add some mustard and mayo, mash it together with a fork. Spread on toast, with or without dill pickle slices. Ohh, baby!
dice one onion, heat oil in pan. saute onions. place corn beef in pan with onions. if you like spicy add some chiles or jamaican peppers. add salt and black pepper. stir for 10 minutes and serve over rice.
Or instead of rice make home fried potatoes:
Cubed potatoes fried with minced onion.
slice it up, dip in batter and fry (deep or shallow, makes no odds) voilà corned beef fritters, I lived on them as a kid
