Share your favorite Crock Pot recipes

This is a new one for me, but it’s going to be a family classic:

1 leek - just the white part, finely diced.
1 quart/liter chicken broth
3-5 diced potatoes - enough to fill crock pot 3/4
sprinkling of dill
1 cup of cream

Chop all ingredients except cream and put in crock pot with broth. Cook 6-8 hours on low. 1 hour before you stop cooking add cream.

Mash potato dice when done with a potato masher (or run through a food processor).

Prior to serving I’ll add crumbled bacon, or mushrooms, or something similar allowing for variations over several nights.

Um… I have a rather small crock pot. For larger crocks you might want to double (or more) the ingredient list.
