What are the plastic triangles in shirt collars called?

Yep, they’re called collar stays. In your better quality shirts, they are removable, so that they don’t get distorted during the laundry process, then reinserted after ironing(if you send your shirts out to be laundered, take them out first, or you’re likely to lose them).
