By the way, what in the world is a center breast? They cut breasts into 3 pieces where you live? I’ve heard KFC does this, but I haven’t been there in many years.
I prefer thighs out of all the ‘normal’ pieces of fried chicken, but the way into my heart is gizzards and liver. Fried chicken gizzards are wonderful, fried chicken liver is better. Hearts are good, too, but I’ve never had a fried chicken heart.
I’ve lost the weight. By all rights, I should be able to eat moderate amounts of fried chicken as I please. My gallbladder, however, disagrees vehemently and is more than willing to press the issue. Happily, eviction is imminent.
Actually, that’s a good question. I have no idea what it means, either. I always just cut breast into two piece, left and right.
I can’t believe “Fighting for Fried Chicken” isn’t a TV show. It could be a huge hit.
If there’s a Crown Fried Chicken (they’re pretty much from PA north and their menus say Halal on them so don’t go to just any Crown) you really need to give them a try. Their skin is so good even I’ll eat it (I hate skin). The meat is always moist, even the breast. The flavor is awesome. We get delivery and have never been delivered a bucket of bones. Their steak and cheese grinder is damn good too.
In fact it was a KFC I was speaking of, um the side breasts have the ribs and the center breast is smaller but has more meat and has that funny triangular cartridge piece.
I’m having trouble believing that the center has more meat, considering the bulk of the breast meat is on the extreme edges.
Actually, I think he’s right. I remember getting a rather strange cut in KFC baskets that’s exactly as he describes, with the cartilage V thing right in the center. Don’t remember the last time I saw one, but then, I’ve had KFC twice in the last ten years or so.
I’ll take everyone’s word for it. I guess it all depends on where they make the cut.
I could see KFC cutting the breast section into three parts to make them more equally sized. A breast does form a disproportionately large piece of the total in bucket chicken, just as it does in Pamela Lee Anderson.
That is why the old school Fry Baby was a great deal. Anything from 4 wings to a leg and thigh or a breast for one or 2 people. It is a real shame it is out of production. The Fry appliances came in IIRC 3 sizes, Fry Baby, Fry Daddy and Fry Grandpappy [or some such name like that.] It really was the first home frying unit, and was seriously better than frying in a pan on the stove. I suppose you can check on ebay and thrift stores for used ones.
why would you buy that pre-made?
I used to work at a KFC store back in the late 70’s - early 80’s, and the center back portion was called a “keel”. Don’t ask why, but that’s what the management called it. I used to love KFC chicken but the recipe was changed and I don’t like it any more. There’s a Popeye’s near my home, but if I have time, I’ll go to Pollo Campero and get a bucket. They’re an import and the chicken is fresh and delicious.
We’ve got a Popeye’s about five minutes from my house, and we used to go there a lot when it first opened (we still go there but not as often). I’ve got the employees trained, though: I always get the same kind of chicken (one mild breast) and I like it with lots of breading. The manager (who’s very nice) will poke through the chicken in the holding area to find me a good piece. 
Agreed about KFC. They used to be good, but something changed and now they aren’t anymore. Not sure what. They’re greasier than they used to be, and the flavor is different.
Both KFC and Church’s seem to be using a LOT more black pepper in their breading seasoning mix.
Trinidad must be one weird-ass place.
I wish Church’s were available around here. I’m sick of Popeye’s and Kentucky Fried Chicken.
Fry Daddies are still on the market. I saw one the other day.
medstar, it was named for the keel bone, I would guess. That’s what runs through the breast.
It may not have the best reputation, but I do love me some Bojangles fried chicken.
Oh thank the lord someone else or a lot of someone elses has noticed how KFC has gone downhill. The last 3 times I tried, I was told there was a wait for fried chicken. “We’ll have that in 20 minutes, if you could just pull up…” I did, I pulled right on out of there while the window person was babbling. It used to be a good quick dinner, but now, ugh. And it seems the same incompetent owns all the franchises here.
