All right, here’s the rules of this thread: You get to assign the poster (after you) 3 countries for them to choose from. Some foreign nation’s head of state and delegation will be visiting the US as a guest and you are the chef in charge of the White House state dinner menu. What do you make?
I will choose…Russia. The Russian president and delegation are coming to town.
MENU:
Appetizers/salads: Smoked-salmon tarts, salty-spicy pecans, pear and apple fruit salad, stir-fried clams in black bean sauce
**Main courses: ** Roasted pheasant, grilled bison flank, borscht soup, stewed carrots
Alcoholic beverages: Dom Perignon champagne and Chateaux Latour Paulilliac red wine
**Dessert: ** Apple pie, baklava, raspberry-chocolate mousse and stewed pears.

Argentina.

Appetizer:Blinis Demidoff, Radishes in Olive Oil and Balsamic Vinegar, Beef Carpaccio as canape [on toast points]

Salad:
Spinach Salad with Strawberries and Nuts

Main:
Beef Wellington [individuals, you cook the beef medallions sous vide, makes presentation better]
Pommes Anna, individual herbed
Tuscan Roasted Asparagus

Dessert:
Probably a selection of fancy miniature desserts, sort of a something for everyone.
several types of cheesecake, tiny tiramisu, petits fours sized different cakes - a mini black forrest, a mini tres leches, a mini italian lemon cream cake and a mini white cake with buttercream frosting [think mini wedding cake], tiny brownies with tiny scoops of ice cream, and mini creme brulees

And of course a selection of cheeses and fruits

I am not up on wine pairings, need to find a sommelier for that but always excellent teas and coffees.

North Korea:

Appetizer: Tostitos with melted Velveeta

Entree: A can of Chef Boy-ar-Dee spaghetti and meatballs

Dessert: Jello Pudding Pops

Japan:

Appetizer: Spinach Artichoke Dip
Main Course: Barbecued spare ribs, baked beans, corn on the cob, cole slaw
Dessert: Apple Pie a la Mode
