To be called “organic” the vodka must be made from a crop that was grown under certified organic conditions.
Some vodkas are made from potatoes, some from from wheat or other grain, some blend both, but that has nothing to do with whether or not they’re organic.
Never tried soy, but I have had an organic vodka - I think it’s called Square One. Comes in a nice-looking square bottle. I had the cucumber flavor. I could see it making a good Bloody Mary. The flavor is *disturbingly *accurate. It tastes spot-on like cucumber. Don’t know how they do it. In fact, cucumbers always make me burp … and so does this vodka. I get cucumber burps from it! 
Some. Others are made from a miscellaneous grain mash. I haven’t tried soy or organic vodka, but I don’t see how it would make much a difference flavorwise. Vodka isn’t aged or flavored (unless it’s flavored vodka), so the distillation is most important. I know, some people will swear to you that their Grey Goose is at least thrice as good tasting as Stoli, but these people are full of shit.
The mineral content of the water that is added back in to dilute it to 40% makes a difference as well. Distilled water tastes gross.
Indeed, some of the more expensive vodkas are diluted only with soft water. They also occasionally have small quantities of sugar or fructose added to them in order to increase smoothness.
Most vodka, at least that is sold in the US, is made from grain. Chopin is a notable exception, being a potato vodka.

I always chose vodka for a drink because it supposedly doesn’t leave an odor on one’s breath, but I guess that’s a myth, if one is drinking grain spirits, isn’t it.
The exception being the cucumber version.
I can just imagine being pulled over one night and reeking of cucumbers - having some peeled ones on the passenger seat - and the cop not giving me a ticket.

Stoli is a mix of wheat and rye grains. Absolut I don`t know for sure. I’d bet that if it has potatoes it’s not ALL potatoes or close to all.

If so … I wouldn’t go around comparing Grey Goose to Everclear, at least not out loud. You do know they have vastly different proofs?
If you do think they’re so similar, please take a side-by-side shot of each. And let me know when - I’d like to make some popcorn and pull up a chair before you take a shot of Everclear.
Never did see anyone take a shot of pure Everquest before, though. Might be fun!

According to the manufacturer’s homepage Absolut is made from Common Wheat.
Yep, Grey Goose, too. Ketel One. Zyr. Belvedere. In fact, Chopin is about the only well-known vodka I could think of off the top of my head that is potato-distilled. Potato vodkas have generally kind of had a bad reputation, but Chopin is pretty highly regarded.

I tried it a few years ago in a blind tasting. I tasted it along with vodkas made from potato, grapes, wheat, rye, and mixed grains, and this one made from soy.
It was by far my least favorite. It had an almost gin like quality, and I don’t like gin.
My favorite and now the only vodka I’ll buy for straight up drinking (which is rare nowadays anyway) was Trump, made from wheat.

And yes, the soy is called 3am. They have some cute names for liquor nowadays, don’t they? One of my favorites is Effin vodka!

No, not really. It’s mostly made from wheat, rye, corn, mixed grains.
I can only think of 3 vodkas made from potatoes off the top of my head, one is Swedish and 2 are Polish, one being Chopin, already mentioned, and a damn fine vodka.
What’s the big deal about Everclear?
There’s no big deal. That’s what you drink when you’re going to be stranded some place dry for a while, and don’t want to lug a bunch of bottles around. Add ice and a mixer, and drink up. Or enjoy straight if you’re 17 and are trying to be hard core.
Yeah, butt the sex police might want to talk to you down at the station for awhile…
