Spice up this Alton Brown bread recipe

I’ve had great results with this dutch oven boule recipe, and I’m looking to experiment on it a little more, but I’m new to baking. I was thinking of mixing things like pine nuts, rolled oats, raisins and dehydrated fruit into the dough. What are some tasty variations I could try?
