I saw a video of a noodle maker (asian) take a lump of dough and stretch it between his hands, and then double it, and then double it and repeat untill he had a 4 foot wide set of noodles… Anyone got a recipe for this noodle dough?

I saw a guy on one of Martin Yan’s shows do that - check his cookbooks.

I’ve found a video of the process, for those who haven’t seen it. But not a recipe - although presumably it’s wheat flour, salt, oil and water.
I’ve seen this done in various places and I’m guessing it’s pretty hard to do, because on each occasion even the Chinese diners were enraptured by the display and they seem pretty hard to impress.
The recipe is secondary to the mad skill needed to prepare these noodles.
