Yes, it’s pretty trivial to add a strikethrough button: an admin just has to upload a button image and enter the local file path in the box for that custom BB code under the AdminCP / Custom BB Codes / BB Code Manager. I got this one from the vBulletin forum, which they could use if they wanted.
But sadly it will appear at the far right of the toolbar. As far as I can tell, it’s impossible to have the strikethrough button next to the bold, italic and underline buttons, which is vexing. Still, it would a helpful shortcut for people who knew the code existed but didn’t know/remember how to use it.

And then of course there’s the wonderful world of colors. In addition to the standard palette you can do any 256-value of RGB by using {color=#ABCDEF}, where the code following the # are the hex values for R, G, & B. 73CC2F gives [COLOR=#73cc2f]this color[/COLOR]
