Should have a somewhat similar sweet/fruity/spicy profile.
A different flavor profile, but sour cream (perhaps w/horseradish, dill, etc) is another traditional accompaniment you might consider if you don’t want something applesauce-like.
Can he eat pear? I think that could sub for apple. Or maybe jicama would be a sub?
Pear would be easiest, but if you’re foodies (and if you’re using Blue Apron, you’re probably foodies) consider quince.
I thought about the same thing… and good pears are readily available right now. Just not sure how the mustard would pair with it.
I don’t see why it would be much different than apple and mustard (neither pairing sounds very appealing to me, frankly.)
Peach was one of the flavors I thought of as well, but they are not in season now, so I would have to go with frozen or canned, which would mean a mushier texture. I am considering mango, which while not crunchy like the apple, would at least be fresh.
The Granny Smith apple is very tart, and likely will balance nicely with a sharp mustard. A nice pear is going to be very sweet, not tart, and I don’t see it complementing the dish.
We aren’t exactly foodies. My husband is not really all that interested in food, but he’s good at following directions, so he will cook the Blue Apron and we have something healthy and interesting to eat on three days a week, some of which I have to work, which saves us from eating so much take out or thrown together meals like hot dogs.
The quince looks a little too challenging for an easy substitute in this, especially if it winds up his night to cook, but I may grab a few to try out next time I hit the farmers market. Thanks.

Be aware that quince is closely related to apples, so if your husband avoids apples due to an allergy, he may also react poorly to quince.
Quince smell lovely - much nicer than they taste. About the only good use for them IMHO is quince paste or membrillo.
As are pears. (And roses, but rose hips would be a very labor intensive substitute.)
