Ostrich is, for some reason, the exception. Ostrich meat is called straus, which is the German word for ostrich. If they had followed the French precedent, ostrich meat would be autruche.
A problem with cheval. It’s somewhat similar to chivo, which is a South American term for goat meat. You’re already going to have enough issues selling people on the idea of eating horses without bringing goats into it.
