Suggestions for St. Patrick's Day Crock Pot Entree

My office is having a St. Patrick’s day buffet next Tuesday. Very informal, everyone brings something. According to the sign-up sheet, no one has yet volunteered to make an entree – lots of sweets, drinks, and some side dishes. So I was thinking I might make something main course-ish.

It should be Crock-Pot-able because while I can plug in a CP we don’t have an oven or any cooking means other than a microwave.

It would be fun to have an Irish theme, but it doesn’t have to – I’d rather bring something that’s tasty than something that’s “Irish” but not too good, though of course both would be ideal.

Any suggestions? Any recipes? Thanks!

P.S. No corned beef. The cook doesn’t like it.

Another traditional Irish entree is lamb stew.

Corned beef, while not Irish but is a traditional St. Pat’s dish, does quite well in a crock pot. I like to put the corning spices in a tea ball.
