Sweet potatoes, pineapple and marshmallows.

I have all three, and I want to combine them into some kind of casserole for T’giving. (The guys will insist on Middle-America sludge.) Only, my memory is shoddy, and I’m not sure exactly how to go about it. Please advise? Thanks in advance!

Here’s one from Cooks.com:

MARSHMALLOW SWEET POTATO CASSEROLE

8 med. sweet potatoes
2 tbsp. butter
1/2 c. hot milk
1/2 tsp. salt
1/2 tsp. cinnamon or nutmeg
1/4 tsp. paprika
1 c. chopped walnuts
1/2 lb. marshmallows

Cook sweet potatoes until tender. Remove skins and mash. When smooth, beat in butter, milk, salt, spices. Beat well. Fold in walnuts and turn into buttered baking dish. Top with marshmallows and bake at 350 degrees until marshmallows puff and become golden brown.

PINEAPPLE MARSHMALLOW SWEET POTATOES

2 (16-18 oz.) can sweet potatoes, drained
1 (8 oz.) can juice pack pine apple chunks, drained, reserving juice
30 marshmallows
1/3 c. firmly packed light brown sugar
3 tbsp. butter

Preheat oven to 350 degrees. Arrange sweet potatoes and pineapple in 1 1/2 quart shallow baking dish. In medium saucepan, combine reserved juice 10 marshmallows, sugar, and butter. Cook and stir until marshmallows melt; pour over potatoes. Bake 45-50 minutes or until bubbly. Top with remaining marshmallows. Return to oven 5 minutes or until marshmallows are soft and lightly browned. Refrigerate leftovers.
