Taco Salad for Dinner! How about you?

The other night the SO cut some squid steaks into chunks, breaded them with panko bread crumbs, and fried them. I mixed some garlic and lemon juice in some mayonnaise for a sauce. She also made fried okra.

Last night was leftover BBQ chicken.

Tonight will be Cajun salmon, mac’n’cheese, and broccoli.

I’ve always wanted to try that place! How is it?

I made chicken parm last night.

Tonight I’ll turn the rest of the jar of marinara into a rose-ish sauce to top some frozen pesto-and-cheese tortellini, and have that with a salad. I’m too low on energy to try harder. That’s why I keep emergency frozen pastas on hand.

I’m making Cuban sammiches with some left-over pulled pork, Black Forest ham, and havarti.

Tonight will be a fish curry and an eggplant curry, with leftovers probably for tomorrow night as well. We still have a leftover kale/lima bean/Italian chicken sausage ragout to bring for lunches.

I’m having the leftover breast from my large batch of fried chicken that I made last night.

The damn thing has been calling me from the fridge… “John?.. Remember me?.. I’m so lonely, why won’t you eat me?..”

I used the bone from the Easter ham to make split pea soup. Plus popovers.

We had grilled chicken breasts and baked beans. I threw on a few slices of butternut squash just to see how it would turn out. It was pretty good. They should have been put on with the chicken, though.

I think I’m going to make taco salad this weekend, when the sprog won’t be home. (He hates Mexican food with a passion.) I make it with very, very lean (96%) ground beef, fat-free refried beans, lettuce, tomatoes, fat-free cheddar cheese, and fat-free Greek yogurt. I eat it with low-carb tortillas. It works out to about 10 PointsPlus per serving, but it’s a LOT of food with a LOT of protein and fiber.

Our hens are producing a ton of eggs all of a sudden, and there was an avocado that was totally ripe. Cooked some garlic, onions, mushrooms, and minced sundried tomatoes and made a frittata with diced avacodo, spinach, and everything else. Garnished with fresh grated Romano and parsley.

Last night, nikumaki, with the sauce, sticky rice, and spring greens salad. The SO even had seconds.

With spring finally being in the air, I’m plumping for a harissa marinaded chicken with herb salad. I can’t wait for decent jersey royal potatoes.

I made salmon patties tonight, which I’ve made for years and my kids like because I used to call them Crabby Patties.
But tonight my 14 yo son disccovered–horrors–a little BONE in his patty. I explained that I always leave the bones in, and the skin as well.
He may never eat solid food again.

Homemade beetroot and quinoa veggie burgers filled with avocado, spinach, pickles and ketchup. Amazing.

Tonight I had to make something on the fly and I’m making garlic buttered whole wheat noodles, with some salami and lots of grated parm, and steamed grean beans. Yum!

Weather’s been great here in Chicago the last two days, so I’ve fired up the grill. Got a lemon & garlic pork loin going, as well as some jerk country style ribs. The recent posts on country style ribs here in one of these SD threads have got me hankerin’ for 'em, even though I rarely make them.

Gonna grill some asparagus to go with all that, too.

I love these threads. They give me ideas.

Tonight it’s chicken breast with greek seasoning, roasted sweet potatoes, and delicious onion rice. That rice is dangerous - I’ve had to downsize the recipe, because my husband and I like it so much there’s a real risk we’ll eat 2 cups of rice each if it’s there.

Drunken noodles, THAI EMERGENCY HOT. A little too hot for me, actually. My left eye won’t stop watering. This is only the second time we’ve made it, so adjustments will be made.

Based on this epicurious recipe. I like that you can make notes on the recipes, like oooh, let’s take an example, 1/4 lb of serranos is too many! We added extra anaheim peppers, did cherry tomatoes instead of romas, and added snow peas.

Really good, but my lips are burning.

Planned on chicken/dumpling soup, but not enough flour. So I made some dumplings and added noodles. . .but I only had a small amount of noodles. But I hade a little leftover rice from Chinese takeout. So it wound up being Chicken Dumpling Noodle Rice Soup. Actually very good.
