Good Mornin’ Y’all! It’s Firday! YAY!!! I survived my mornin’ commute once again without incident, although I did sneeze while holdin’ a cup o’ caffiene and almost spilled some. :eek:

Well, I put a batch for myself in the crock pot this morning, for after I come home from work.

Slept till almost 6, which is pretty darn good, and have now caught up with the MMP. And added **Soapy’s **chicken recipe to the blog. I, too, love leeks. And hereby request the stuffing recipe. I’m hoping I get to make mashed potatoes and turnips with leeks tonight or tomorrow. It’s a kind of tedious recipe because you cook the turnips and potatoes separately, but very yum.

gt- I make this dressing almost every year for Thanksgiving since 1996 and I do a quicky version (I buy Pepperridge Farm plain stuffing mix rather than the bread and crackers) for regular meals. There is only one other stuffing recipe I ever use- (one I made up for the Jewish holidays, or when my parents come for Thanksgiving that is kosher and is based on challah). I love this recipe.

Herbed bread, cracker and Leek stuffing: Gourmet magazine, with modifications

1 16-ounce loaf firm white bread (do not trim crusts), cut into 3/4-inch pieces

1/2 cup (1 stick) butter
3 leeks (white and pale green parts only), halved lengthwise, rinsed, thinly sliced

2 medium onions, chopped
3 celery stalks, chopped
2 cups coarsely crumbled saltine crackers
1/2 cup chopped fresh Italian parsley

3 tablespoons chopped fresh sage or 1 tablespoon dried
3 tablespoons chopped fresh savory or 1 tablespoon dried

3 tablespoons chopped fresh thyme or 1 tablespoon dried
3/4 teaspoon salt
3/4 teaspoon ground black pepper

1 cup milk
1/2 cup canned chicken broth

Preparation
Preheat oven to 300°F. Spread bread on 2 large baking sheets. Bake until just dry but not brown, stirring occasionally, about 18 minutes. Transfer to very large bowl.

Melt butter in heavy large skillet over medium-high heat. Add leeks, onions and celery and sauté until tender but not brown, about 15 minutes. Transfer to bowl with bread. Mix in cracker crumbs, herbs, salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)

Butter 2-quart baking dish. Mix milk into dressing. Reserve about 6 cups dressing for turkey. Mix 1/2 cup broth into remaining dressing and transfer to prepared baking dish. Cover with foil. Bake dressing in covered dish alongside turkey for 40 minutes. Uncover and bake until golden brown on top, about 20 minutes longer.

(I don’t stuff my turkey, so I bake all of it in baking dishes. I usually use 1 really big casserole or two 2 qt ones. When I don’t stuff I add additional broth to the stuffing and baste the stuffing with pan drippings as the turkey roasts to get that same taste.)

I think we got more damp in the basement than we thought with the torrential rain last weekend. The basement reeks of mildew and cat piss. I am going to do a thorough clean out this weekend–rugs, floor etc. Ugh.

I think I’m getting old - just a few years ago, two beers and a plateful of chicken wings would be considered a good start to a night out which would usually involve lots more beer and greasy edibles. Now, two beers and a plateful of chicken wings wakes me up at 4am with an angry tummy and scary dreams of vegan zombies (don’t ask).

Soapy, I hope you put plenty of dill and parsnips in your soup? From what I’ve been told, without either of the above, it’s just not real chicken soup and its healing properties will be substandard.

Last night was truly, truly awful, and I hope Mr. Lissar doesn’t keel over at work. Nat cried on and off (five minute reprieves) from 10:30 to 1:30, and then 4:30-5:30, when I got him up. He just napped for two hours, so I got a bit of sleep, but we’re all exhausted. I hope tonight goes better.
It’s perfect weather out, so I’m going to clean in anticipation of inlaw drop-ins this afternoon. Joy.

kai, I’d bet that my Mom would have known, but I’m not so sure my Dad would–Interlochen was (and perhaps still is) a fairly small community, and 1962-63 was the first year the Arts Academy was open, Mom was the musician (she taught organ); my Dad taught English and history, just academics, no arts. Anyways, pm me and I’ll run it by my Dad. Stranger things, indeed, have happened. :slight_smile:

I was actually going to post that- Jewish chicken soup requires dill and parsnips or it just doesn’t taste right!!

My quickie, in the crock pot, chicken soup:

1 small chicken, or bone in parts up to about 3 lbs
1 box high quality chicken broth (4 cups?)
handful of dill, fresh
handful of parsley, fresh
2-3 large carrots cut into large chunks
2 med parsnips cut into large chunks
1 onion, whole, peeled
2-3 stalks celery, cut into large chunks
water to cover

All day in the crock pot on low.

Super quick and very tasty. My homemade, homemade version takes a lot longer and is really good- but this is pretty darn tasty and quick!

Can’t I just use a lot of parsnips and garlic?

I’m down south. We use cornbread and we call it dressing, not stuffing. I bet leeks would taste good in dressing. I may experiment this Thanksgiving. Or maybe before. Anytime is a good time for some good old cornbread dressing!

A few minutes ago the power flickered on/off real quick like. Just enough to upset the puter, the cable and for some reason the alarm system. I hardly ever set the alarm system, so I’d forgotten just how LOUD it is!

JoeDawg will be here in just a little while. Remember, I’m nanny for a few days whilst his daddy goes to the beach. I have his bed ready and have the comforters on the sofa and chair because, as y’all know, I insist on a strict regimen for JoeDawg while he’s here so he does not become spoiled.
