Talk to me about ghee -- eating it, cooking with it, tips, cautions

Well, since you asked…At the end of the show, Kerr would invite a member of the audience to come up and eat the meal with him as they rolled the credits and played the theme music. In one episode, he invited the mother of a friend of mine. As she sat down, he gave her that huge infectious smile and spoke to her. As always, it looked like he was the effusive host. But what he said was, “this will taste terrible, but please act
Iike you’re enjoying it. We’ll serve you the proper meal later!” She said there were bits of eggshell, the seasoning bizarre, parts were burned, parts were undercooked, but she gamely smiled and pretended it was marvellous.

It’s not surprising, given it was a 30 minute show and always looked so slapdash and hectic. Not to mention, of course, Kerr was known for adding wine to everything, including “a short slurp for the cook.”

Yes, he did tend to get a bit wild as the end of each show approached. I must say, I liked the jokes he told at the beginning of every episode. I remember one in particular, about why they tie the umbilical cord whenever a baby is born:

"Well, I suppose if they didn’t, the baby would fly all around the room, BRRRRRRT-BRRRRRRT-BRRRRRPT!"

(You have to imagine him gesticulating grandly as he made the noise. :rofl: )

It’s easy to make. Mostly I make a pound of niter kibbeh which is ghee with spices, then pour it in a pint jar. Then I can make several Ethiopian meals out of it over a couple months, it lasts awhile in the fridge.
