They don’t. It isn’t possible in plain HTML or vB. I’ve seen some nice gradient-colored posts, but each letter is one solid color.
Is this what you are talking about, Quasimodem? (I know it’s not a great example, but I didn’t feel like spending too much time testing colors.)

Yep. Someone on our board here came up with little application to do the coding for you–all you have to do is copy-and-paste the result to the reply window. I can’t recall who it was right now, but it wasn’t all that long ago.
