I am going to dinner at a friend’s house, together we are cooking for 8 people.
Paul is making:
Turkey wellington
Prime rib
Mashed potatoes
Stuffing
Gravy
Chocolate pear pie (his specialty)
I am bringing:
Sweet potato casserole (my mom’s recipe with brown sugar pecan topping)
Rolls
hot buttered rum
wine
Home made cranberry sauce
2 cans of cranberries for those who like it sliced
Roasted brussel sprouts with bacon
Pumpkin cheesecake with home made whipped cream
I’m having the main meal at a friend’s house tomorrow, but just for the hell of it, I made a single-guy faux-thanksgiving meal tonight (just finished it) that turned out shockingly tasty. I wouldn’t serve it to guests this way, but man, it satisfied.
Smoked turkey breast
Stuffing
Herb and butter instant mashed potatoes
Brussel sprouts with butter and soy sauce
15 minutes prep and 40 more to cook everything up. Stuffing was done in the oven (turkey breast thrown on top to heat it up with 15 minutes to go), sprouts on the stove top, mashed spuds in the microwave. Yeah, go ahead and laugh.
It’s only my fiance, my friend Debra, Mary Cherry (our dog), Romeo and Lilly (her dogs), and I this year; so we aren’t going all out.
Drinks:
Homemade Mint Ice tea
Assorted Chilean red wines
Champagne (Mimosas?)
Soymilk (with dessert)
Appetizer:
Fried Camembert with a homemade cranberry sauce on top.
Pumpkin Pie dip with assorted local organic pear and apple slices, mayhap crackers for either.
Main Course:
Leg of Lamb (my fiance’s family always did rooster growing up, so he is anti-turkey)
Homemade cornbread apple stuffing
Grilled Asparagus
Debra’s Potato dish (it’s a suprise)
Debra’s Sweet Potato dish (it’s a suprise)
Dessert:
Pumpkin Cheesecake
Apple Crisp
Debra’s Cookies (also a suprise)
I think that’s it.
Not bad for a first Thanksgiving, right?
Ours is a small affair this year. The last two years we’ve visited friends in SoCal for Thanksgiving. This year we decided to stay home, but didn’t ask around soon enough and our circle of friends had made other commitments. MrsSqueegee, SqueegeeJr, myself and MrsSqueegeeBro will be attending.
Anyway, the menu is simple:
- Roast Turkey ala Alton Brown. Awesome recipe. Brined, no stuffing in the bird. The bird is brining as I type this. I may or may not cook the turkey inverted, I’ll decide tomorrow, but I’m leaning toward not doing so because turning a hot bird is quite a production.
- Gravy, of course, made from the turkey pan drippings.
- Lobster tails. Three. SqueegeeJr had requested an alternate main dish because he’s not into turkey. It’s Thankgiving, so we indulged him. I’ll cook these on the grill just before dinnertime.
- Scalloped Potatoes, ala MrsSqueegee, made from scratch.
- Bread stuffing, sans bird, ala me and the usual recipe from the BHAG New Cookbook.
- Dinner rolls, salad, yada yada, the usuals.
- Pumpkin pie + Cool Whip, always a crowd pleaser. Mrs Sq cooked the pies this afternoon, they are basking on the kitchen counter right now.
If you live near Gilroy, stop by and say Hi. There will be a prodigous amount of leftovers, we’re happy to share.
Turkey, roasted
Cornbread and sausage stuffing
Mashed potatoes
Sauteed green beans
Cranberry sauce
And possibly some mixed squash, depending on how utterly exhausted I am [del]tomorrow[/del] later today.
I’m cooking for just 3 this year and I decided to go with a big roast chicken instead of turkey. This is my first turkey-free Thanksgiving in years. I still feel weird.
Mashed Potatoes
Slow cooked string beans
Sausage bread stuffing
Pancit ('pino noodle dish)
Pan gravy
Yeast rolls
Corn on the cob
Salad greens - vinagrette
Sweet potato pie with whipped cream
Peach Cobbler
Well, it’s over. The wife and I stuffed ourselves silly. I feel like that guy in Monty Python, the one who explodes after eating just one little thin wafer more. So does the wife. We thought we might do some shopping afterward, but there was just no frickin’ way. It was all we could to to waddle out, flop ourselves into a taxi and come straight back home.
In addition to all of the wonderful items listed in the link above, we had a pitcher of mango margaritas.
It’s been two years since my last Thanksgiving. Last year, that was the day I entered the hospital for my second shoulder surgery. No fun at all. We tried to make up for it when I got out, but it just wasn’t the same. Nice to have a proper one.
Happy Thanksgiving, everyone!
I’m alone this year, so my menu will be limited.
I’ve got the giblets simmering, preparing the stock and the makin’s for giblet gravy. The turkey has been washed, and is waiting in the fridge until the stock is done.
The menu is:
Roasted turkey
Stuffing
Mashed potatoes
Gravy
Cranberry sauce from a can
Corn
That’s it. Usually I make fresh brussels sprouts, but I forgot to buy them. I was going to make green bean casserole, but I’ve only one can of green beans and I’m out of fried onions. No rolls, either. Since it’s only me, I don’t feel like going to the store. Anyway, I’ll have far too many leftovers as it is. So it’s just meat’n’potatoes. Maybe I’ll just have some green beans instead of the corn. Or in addition to the corn. But really I prefer ‘just green beans’ to be fresh, and not out of a can.
I’ll put the turkey in sometime around noon. I cook in a roasting bag, and a 12-pound stuffed turkey takes 2-1/2 to three hours. Mine’s ten pounds, but I’m estimating it will take about the same time. I’ll be using two thermometers – one for the meat, and one for the stuffing.
Out in the middle of nowhere. For the last few years, we’ve been camping out a few miles north of Danby, which is about 23 miles east of Amboy on Route 66. There is a old dirt airstrip back in the hills that makes a great campsite.
This year there was no wind on Thursday, so Paul deep-fried the bird. Delicious!
I think I cooked the Best.Turkey. EVAR.
Unfortunately, I had three new factors, so I don’t really know which one or ones made the difference.
-
Fresh, not frozen, turkey
-
Probe thermometer in thigh and breast cooled with ice before putting the turkey in the oven
-
Salt roasting technique
The bird was very moist and flavorful.
And, Wondra flour, where have you been all my life? I don’t know what made me decide to buy some this year, but it made the gravy-making ridiculously easy.
Family get-together; Our Thanksgiving menu was as follows:
Two 4 and a half pound ducks
Butternut Squash Soup with parsely and mint
Roasted potatoes
A chick-pea dish
Bread and butter
Homemade cranberry sauce
Apple cake
Chocolate pound cake
Pumpkin Pie.
Better late than never, right? We have the same menu for all the big holidays, as long as I can remember. Grama has retired to a supervisory position, after training me for over 20 years, so me and my girls handle all of this:
20 lb. turkey
18 lb. baked ham
macaroni and cheese
rice
collard greens
green beans
stuffing
rolls
potato salad
candied yams
pan gravy with a handful of stuffing thrown in
The girls spent the night with granny the night before thanksgiving to make the required 15 sweet potato pies. In our family, it’s tradition to “fall through” and take a pie home. And a huge plate, if we can foist one upon you!
My family has departed, leaving me with a refridgerator full of yummy leftovers. Our menu was:
Roast turkey
Fried turkey
Gravy
Sausage stuffing
Apple-walnut dressing
Mashed potatoes
Peas
Corn Pudding
Spinach Rice casserole
Green bean casserole
Vegetable casserole
Onion Gratin
Sauerkraut and apples
Asparagus egg casserole
Cranberry salad
Sweet potato casserole
Apple cranberry pie
Pumpkin cheesecake
French chocolate cream pie
Pinot Grigio, Pinot Noir, Chardonnay, Shiraz, Sauvignon Blanc, Reisling, and spiced wine
We had 14 very well fed people.
Whoooo-wheeee!!
