And as a side not, I have not seen any mini-series.
Not Roots, Rich Man Poor Man, The Blue and The Gray, Shogun… etc. although at 50+ years, I remember all of these airing.

Any of the Godfathers
Goodfellas
Caddyshack
Ferris Bueller’s Day Off
I only saw the first Lord of the Rings movie and none of the Harry Potter movies.
Casablanca
Citizen Kane
Birth Of A Nation
The Maltese Falcon
The Graduate
Threadjack Part II: I first saw ET when I was younger. Then I later saw the re-release. While maligned for the walkie-talkies for a split-second, I, too, thought it was much better than I remembered. The sound and music especially.
I have never seen “The Crying Game”, “Soylent Green”, or “The Usual Suspects”. But thanks to pop culture, I know the ending/twist in each one.
Christmas Story.
It’s a Wonderful Life (can’t day I ever even tried to watch it in the hundreds of times it’s been on TV during my life)
Gone with the Wind (seen small pieces on TV but it never caught my interest)
Titanic (tried watching on TV)
None of them really makes my list of something I feel like I should eventually get around to.
Pretty much anything Spielberg or Cameron has done in the last decade or so.
I haven’t seen most of the recent movies.
Some of my friends are surprised that I’ve never seen Animal House.
I, on the other hand, would say that “The Oxbow Incident” is well worth it. It’s nominally a western, but it’s really a story about human nature, and beautifully filmed in B&W.
For me, I’ve never made it through a Harry Potter movie. It took me five tries to finally get through Blade Runner (kept falling asleep). Never seen Metropolis (1927) or Birth of a Nation or Uncle Tom’s Cabin.
Someday, I intend to see Casablanca.
If you decide to change your mind on Hitch, I’d recommend Rear Window, which is Grace Kelly’s best movie. Jimmy Stewart plays another Hitchcock hero/creep like in Vertigo, but this movie is a bit lighter.
Grease was a huge film when I was young, and a boatload of the songs from it were big hits in the UK. I could probably sing along to most of them, lo!, these many years later. I’ve still never seen the movie.
I haven’t seen any of either series.
Star Wars
I’ve seen “Rocky Horror Picture Show” but not in a theater. Does that count?
Lots.
Shawshank Redemption
Avatar
Titanic
Gone with the wind
Schindlers List
Scarface
All of the Godfathers
Plenty more but these are the more famous ones that come to mind. I tend to watch movies as escapism, I don’t want thought provoking stuff, I just want to stick my brain in neutral and kick back and be entertained.
The Godfather movies, and gangster-related mafia movies.
Pretty Woman.
Sleepless In Seattle.
When Harry Met Sally.
Any Pirates of the Caribbean.
Any Spiderman.
Any Batman or Superman (exception: Superman II, loved it)
Any Westerns. (exception: Shane. I adore Shane.)
I’ve seen bits and pieces of the above, but never sat all the way through. Some genres just rub me the wrong way, such as romantic comedies. I just can’t. I do like fantasy, science fiction, some war movies. I have a very eclectic DVD collection.
“American Sniper”
Anything with a zombie or vampire.
“50 Shades of Gray”
Slasher movies
“Steel Magnolias”
“Sleepless in Seattle”
