Why life and not hereditary?
Because Edward and his kids are getting increasingly far away from the succession, and Edinburgh has one of the titles that traditionally stays in the close Royal Family.

Two thoughts:
First, Charles’ notion of a “slimmed-down royal family” may lead him to want to limit the number of royal dukes. Edward is the brother of the king, but his son will be successively nephew of the king, first cousin of the king, first cousin once removed of the king. Charles may think that’s a bit too remote from the throne to warrant a dukedom.
Secondly, Edward choice has consistently been to give his children a certain distance from the fullness of royal panoply. His son could be styled HRH the Prince James of Edinburgh but he never has been; he uses the style of the son of a duke, and the courtesy title Lord Wessex. Similarly his daughter is Lady Louise Mountbatten-Windsor, rather than HRH the Princess Louise of Edinburgh. Making the dukedom non-heritable is consistent with this approach.
