When I make hush puppies, they’re really basic. Flour, corn meal, a couple of eggs, some milk, baking soda, baking powder, and a pot of hot oil. But what I want is a recipe for The World’s Best Hush Puppies. So here’s your chance to post it.
Or them. While I don’t use sugar in my cornbread, I’m not averse to it in hush puppies. So post your recipes with sugar or without. I don’t want onions or jalapeños in mine, but others may; so post them too.
I’ve got lots of corn meal, and there’s a big can of honey in the cupboard.
I’m confused, do you want a hush puppies recipe, or some strange onionless corn fritter recipe? Do you also want a recipe for chili without tomatoes, and pesto without basil or garlic?
I see your confusion, as chili shouldn’t have tomatoes. It’s ok though, just give us a hush puppy recipe and we’ll let it slide this time.
The only ones I’ve seen are a cornbread-ish ball that you fry in oil. I’ve usually had them with seafood, or what passes for seafood at Long John Silver’s or the like.
1.5 cups cornmeal
.5 cups flour
2t baking powder
1T sugar
.5t salt
1 onion, grated
hot sauce/cayenne to taste
1 egg
1 cup buttermilk
Combine dry ingredients. Whisk egg and buttermilk together, then add to dry ingredients in stages (you may not need all of it). Do not over mix. Drop spoonfulls of dough into 350 degree peanut oil until golden brown.
I’ve seen version that add cheese or green onions to the batter, but that’s a bit much. They should be light and set off the fish or BBQ, not an entree on their own.
Man, I make mine a la Summer Of My German Soldier… after I’m done frying fish, I take whatever breading is left, add whatever milk and egg is left and some onion, and fry the batter in the same oil.
I wouldn’t say that this makes particularly *good *hush puppies.
