I just bought a blender, and I’m having a ton of fun, but I’d like to know what you blender old hands do with yours.
There are smoothies, of course. But I’m not a huge sweet fan, so I don’t think I’m ever going to get into elaborate smoothie recipes. Right now there are a lot of citrus fruits. Is there anything I can do with citrus?
I made salsa the other day with tomatoes, roasted peppers, cilantro, garlic, onion, vinegar and spices. It was wonderful and lasted like two seconds, even though I have to make my own tortillas to go with it.
Today I made a smooth mung-bean split pea style soup. Just some mung beans, onion, garlic, curry spices, and a green pepper. All cooked and then blended. It was really good and I loved the light, smooth texture.
So, what do you guys do? One request though- no recipes with cheese. I can’t get it and even thinking about it makes me want to cry.
I use mine when I make meatloaf. No, not for the meat. My recipe calls for chopped onion, an egg, etc. So I put the liquid and the egg into the blender, add the quartered onion and let 'er rip. Onion is nicely incorporated. If for some reason I’m using fresh breadcrumbs instead of packaged ones, I crumb the bread first in the blender, put the breadcrumbs in the bowl with the ground meat, and then do the other ingredients as per above.
I make a mean jerk marinade in mine. Soy sauce, OJ, lime juice, chopped ginger, chopped onion, allspice, cinnamon, salt and pepper. And a scotch bonnet if you want! Marinade shrimp or chicken and skewer to grill.
3 eggs.
1 cup flour
1 cup milk
3 TBs melted butter
3 TBs sugar
1 tsp salt
vanilla (optional)
blend until smooth. Pour onto greased flatbottom pan heated to medium-low. Rotate pan until batter is thinly spread over bottom of pan. Flip after 30 seconds or so.
