Three egg yolks (and 6 whole eggs) what do?

Anyone got any easy ideas for something clever to do with three raw egg yolks?

Carbonara?

Scrambled egg sandwich.

Whip in bowl with some milk; add cheese or ham or… .

Use the yolks for a rich pie crust, then make quiche filling with the remainder. Add your favorite sauteed vegetables. (mushrooms, onions, roasted tomatoes or peppers, artichoke, broccoli, asparagus…). Maybe some ham and/or cheese.

(Go ahead and use all 3 egg yolks, or use one to glaze the crust edge with.)

You can make it tonight and have it for breakfast tomorrow, if you like.

An extra eggy omelet?

Vanilla custard?

Pudding, hollandaise sauce, ice cream/frozen custard?

Or freeze them for a future recipe - they need a little special preparation to prevent them from getting too gelatinous, but it’s easy: directions.

If you have other baking or cooking to do, two egg yolks and one tablespoon of water can substitute for one whole egg. Looks like you have one and a half eggs there!:smiley:

Yellow cake (can also add 1 tbsp grated lemon, and ice with lemon icing)

Give yourself an egg shampoo, or make your own tempera paint.

Mix a cup of flour, 2 teaspoons baking powder a pinch of salt and a couple of grinds of fresh pepper with a whisk. Caramelize a half an onion, slice as many garlic cloves as you have the taste and patience for and brown those. Take them out the frying pan, open two Italian sausage links and a handful of ground beef. Brown. Mix in the onions and garlic. Spray a casserole dish with spray oil. Put meat mixture in.

Now take your yolks and an egg (only one), a melted pat of butter, a cup of milk and a cup of shredded cheddar, add it to the flour mixture, whisk it into a batter and pour over meat mixture. Sprinkle some cheddar across the top. Bake at 375 for about a half an hour.
