Hey all. I made my first Tira Misu this afternoon and it turned out pretty good, even though I had to take all the alcohol out of the recipe. However, the lady fingers turned out a bit wet. I’ll probably drizzle them with the sweetened espresso next time instead of actually dunking them. But all in all a treat for everyone.
Anyone else had success in making this at home? Tips and suggestions warmly wlecomed.
Are you using fresh ladyfingers (not the hard dry storebought kind)? Because ideally you are supposed to soak them. If they are TOO wet, give them a slight squeeze after you soak them this will eject a little of the coffee syrup. If you still find this is not enough, get a pastry brush (a painter’s brush will do) and use that to apply the coffee, make sure you soak it enough to get the whole ladyfinger wet. Apart from making sure you get the best quality Mascarpone, using a little alcohol does make a difference. Also if you make your own ladyfingers, you can pipe them next to each other, resulting in squares which are easier to handle than individuals.
