Dandelion (somehow I knew I would be the first to mention this one. I have an irrational affection for 1967 British psychedelia.)
Jumpin’ Jack Flash. (Simply one of the best classic rockers ever, up there with the Who’s “Happy Jack” and the Kinks’ “Victoria.”)
She’s So Cold (it came out just before I left for college, so it’s inextricably connected with being 17-18 and all the delightful things about that age.)

I love many of the rockers, but it’s interesting that my top 3 turn out to be mellow numbers. Even my “honorable mention” – the live (Ya Yas) version of Love in Vain – is mellow. Other faves include She Smiled Sweetly, Child of the Moon, Gimme Shelter, and Gotta Get Away. ETA: Dropo, the live version of Stray Cat Blues was what first turned me on to the Stones, at age nine!
My long-time Top Two are easy- for the past 40 years they’ve been:

Gimme Shelter for the mix of vocals I have heard that this is Mick Jagger’s favorite.
