Topping For Baked Sweet Potatoes

Top it with pulled pork, scallions, a little bacon and some chipotle dressing. (As seen on D, D & D)

When I bake them in the oven, I throw a couple of sprigs of rosemary and a few cloves of garlic in with the sweet potatoes, and their aromatic oils flavor the potatoes. Not sure how it would work out in the microwave, though.

Then just butter, kosher salt (this is one of those times the flake size/shape matters) and freshly ground black pepper.)

You can also slice up the sweet potatoes, toss them with a bit of oil, rosemary and/or garlic and salt and then roast them until the cut edges are just starting to turn brown. Pepper when they’re out of the oven (pepper is prone to burning otherwise.) Divine.

I like them topped with barbecue sauce + mozzarella.

Inspired by Alton Brown, I like to mash mine and add chipotle peppers. Adds a nice smokey heat that works very well with them.

I also enjoy cubing them and roasting in a hot oven - then just covering with a little salt. Sometimes I’ll also throw in some chili powder.

I’m going to try the goat cheese next time!

I have a nice Cajun seasoning that I use. The sweet mixed with just a bit of the salt and heat make it perfect.
