Well, they never were really anything else in TOS. They were planned to be used as futuristic salt shakers, but Gene decided they would confuse too many fans. They fit the bill perfectly when a script asked for a scanning device.

Where in Star Trek: The Motion Picture where does it establish that Will Decker is Matt’s son? I had always assumed it, but I never saw any corroboration in the movie. Was that something in the script that never made it to the final edition. I think that in the novelization of the screenplay, the gal in the transporter who ended up as protoplasmic goo had had some kind of relationship with Kirk, but that didn’t show up on screen–and may have just been added to the novel.

Aes, according to the book I listed above, the items were designed while they were working on the script for The Man Trap. They were going to have all sorts of interaction with salt shakers and the Salt Vampire. No such luck, though. They looked too futuristic. So much so that Gene thought they would never be recognized as salt shakers. So, they became scanners for the medical tricorders. As far as whether they were ever actually used at any time as a salt shaker, I just don’t know.

IIRC, he asked if he could appear on an episode, which he did playing poker on the holideck with Data and a number of famous scientists from history. The name of the episode escapes me.
Hawking had a cameo in Descent, which he had asked for on his tour of TNG’s set. So, I guess the q is answered. But, I was going for something else pretty significant showing he was a fan. This particular request is what led to the conv about being in an episode.
Not a huge ST fan, but didn’t the guy who plays the pilot in Voyager (Tom Paris?) play a cadet in the episode where Wesley Crusher covered up a training accident? IIRC, the Voyager guy was the acrobatic flying team leader, or something similar.
