Vegetables for brinner?

The kids and I are fans of brinner (breakfast for dinner) and often have it when Mr. Boozilu is out of town.

It occurs to me that I’m being a terrible mom by feeding them eggs and bacon and hash browns with no veggies. But I can’t think of a vegetable dish that is good for brinner (or breakfast, for that matter).

Any suggestions?

Hash browns are potatoes. Add onions, green and red bell peppers.

Refried beans and salsa with the eggs for a mock huevos rancheros.

One of the best breakfast places near me uses red onions, garlic, sweet potatoes and carrots in their version of hash browns. Roasted for a while until soft, and then crisped up on the stove in a little oil.

Also remember that fruit counts. Applesauce, an orange, a grapefruit, a dish of seasonal fruit, some canned peaches over cottage cheese…

We usually go for fruit when having breakfast for dinner. Adding peppers, onions, etc to potatoes is a good idea. Also mixing spinach in with the eggs is a favorite with my son.

Pan-fried tomatoes and mushrooms are a traditional part of an English breakfast. It’s nice, try it.

I don’t know why, but for some reason I like a plate of sliced tomatoes when I’m having breakfast.

Asparagus spears, steamed, with a bit of hollandaise if you’re having eggs Benedict.

Yup, English fry up. Bacon, then halved mushrooms, quartered tomatoes, and eggs sunny side up all cooked in one frying pan. Add some canned beans if you like.

Many different veggies can be sauteed and tucked into an omelette, or just scrambled into eggs.

V8 or some other vegetable juice.

I’ve seen pumpkin pancakes.

First thing I thought of. Halve tomatoes, brush with a little oil and park under the broiler until just about charred. Wonderful!

In this part of the south, a lot of places will serve you a side of sliced tomatoes with breakfast. They go especially well with eggs and grits. :slight_smile:

Florentine omelets are a good way to get the veggies in, what with the spinach, onions and mushrooms. Breakfast burritos and tacos work well, having some lettuce, tomato, guacamole and, at my house, black olives. Broccoli quiche or fritatta is good.

If you check out your cookbooks, there are a lot of options for vegetables in egg / breakfast dishes.

If melons are in season, they are very nice for dessert. Strawberries are also nice. I can’t say that I’m particularly fond of tomatoes with breakfast, but I’ll eat them at other times. Slice them, drizzle with Italian dressing or red wine vinaigrette, and let them sit for a few minutes. Or even just drizzle with red wine vinegar and some olive oil, and sprinkle with salt and pepper.

Bah. Add grits, drink orange juice and call it good. For bonus points, ya can claim grain credit for pancakes/waffles/french toast. Breakfast for dinner is a sublime joy not to be tarnished with gratuitous vegetable matter.

Well just for suggestion, there’s the good ol 'garden omelette. Some Asian cultures have no compunction about veggies and pickles for breakfast… you can add just about anything to congee (rice gruel) and it will taste good and perhaps be an improvement.

I think I have also seen some savory breakfast casseroles that are veg heavy.

My new favorite from the Original Pancake House is their Dutch Garden Pancake (that recipe link looks pretty close, except it’s all light and low cal… sure you can easily change it back to normal by subs.) If I had to eat vegetables for breakfast I can’t think of a better way than in a dutch pancake with smoked gouda.

Eggs florentine with spinach and smoked salmon
Bagel with sliced tomato and avocado drizzled with balsamic vinegar
Breakfast burrito with egg, cheese salsa and guacamole
Go Vietnamese with a pho soup
Avocado and feta mash on toast
Eggs poached in tomato sauce with beans, feta and spinach
Field mushrooms with gruyere on toast
Bacon, avocado and beans on cornbread

In the UK it’s not unheard of for people to eat bubble and squeak for breakfast. Very tasty.

I went to a Turkish restaurant that made zucchini pancakes. They were like potato pancakes, just finely shredded zucchini, possibly a little egg and flour. They were wonderful.

I’d say just go with a side of fruit.

Good hash browns are a near-transcendent pleasure. Why would you ruin them with onions and peppers? Yuck.

And stop worrying so much. No, you’re not a terrible mom if you serve your kids a meal with no veggies every now and then.

Broccoli, asparagus and spinach all go really well with eggs. Add them to the scramble, fold into an omelet, or have them on the side.

Thumbs up to fruit too.

I love blackeye peas with eggs — and I third or fourth the idea of spinach and mushrooms, with tomatoes, either as a side or in an omelet.
