Fry thin sliced firm tofu strips, add sauteed greens and vegis you enjoy, for example: celery, mushrooms, green beans, green onions, kale, etc. Mix with favorite soup broth, flavored with chili, tamari soy sauce, and lime juice. Finally add prepared mi fun noodles, and serve steaming hot.

It’s not really an easy appetizer, despite the fact it’s easy to cook, but calabacitas wins both vegetarians and non-vegetarians over. I’m basically a carnivore, but yumm! Chunk up the zucchini and squash large enough, make sure it’s not oily, and a paper plate and plastic fork are all you need.
