Last night I tried Mark Bittman’s Nut Burger recipe and it was great! I like Bittman’s style and want to try maybe 10% of his recipe’s. He won me over with the no knead bread.
Nut Burger[ Use the link for the full recipe
1 medium onion
1 cup walnuts, pecans, almonds, cashews or other nuts, preferably raw
1 cup (raw) rolled oats or cooked short-grain white or brown rice
2 tablespoons ketchup, miso, tomato paste, nut butter or tahini
1 teaspoon chili powder or any spice mix you like
Salt and freshly ground black pepper
1 egg
I used raw walnuts, 2 tbls soy sauce for the wet stuff and no salt. Awesome.
Also a while back I found a recipe for a [URL=“http://www.gourmet.org/recipes/beans-and-grains/veggie-burger-mix/”]veggie burger mix](http://www.nytimes.com/2006/02/15/dining/152mrex.html?_r=1&pagewanted=print), and it’s really good too.
½ cup Dry garbanzo beans
½ cup Dry soybeans
½ cup Dry lentils
½ cup Yellow split peas
½ cup Instant brown rice
½ cup Rolled oats
¼ cup Bread crumbs
¼ cup Cornmeal
1½ teaspoon Baking soda
Put the ingredients one by one in a blender. Turn on the blender. Run for cover (it’s pretty noisy). When everything is reduced to powder, combine in a container. Add hot water and then fry or bake.
Any one else have a good veggie burger recipe?
