One of our sandwiches is a black bean chipotle burger, from a company that makes a lot of vegetarian items.
Now, I’m a carnivore at heart, or maybe omnivore would be better. Suffice it to say I like meat. But this burger is very tasty, the only grilled patty on a bun(I make the buns) item that I like.
There are black beans in it, bits of minced onion, and I think, peppers, some of which may be the chipotle from it’s name, also kernels of corn. This all appears to be held together by a bean paste. As best I can tell, there’s no rice, oatmeal, or cheese in it.
I’ve done a search for black bean burgers, and found quite a few, but most use one or more of the latter three items.
If anyone reading this has a recipe that sounds like this, could I please look at it, or get a link provided? I dread the day when, for whatever reason, I won’t be able to get the ones that we buy for the cafe.
And if you also have a meatless patty you think is good, I’d like to look at that too. I’m on a diet, and have also given up meat for Lent, and by now I’m getting bored with salads and soups and plain fruit.
Morningstar Farms makes a black bean chipotle burger that’s pretty good. Their non-chipotle black bean burger is pretty good, too, and only 120 calories. But they’re pretty small. You could try them to compare with the ones you have.
I have a recipe, but it’s on my other computer. I know I mix up a couple of cans of black beans with some canned chipotle peppers in adobo sauce (not too much, as they’re very hot), minced onion, and maybe some saltine cracker crumbs and an egg for binder. But I can’t swear to this at the moment. Perhaps in the morning.
It’s actually Morningstar who’s bean burgers we buy, so I know they are good!
They must make different sizes, maybe some for the restaurant industry, because I found the nutritional info for the patty on their website, but it was for a smaller patty than we use. The ones we have are 4.25 ounces. Thanks for the link though!
Well, somehow I must have deleted that recipe. Don’t ask.
But those are the basic ingredients, with, I’m sure, some chopped cilantro and maybe a bit of chili powder. I recall lightly mushing some of the beans and leaving others whole for texture, and they had a tendency to fall apart so it needed tweaking, I’m sure (this was my own attempt to recreate a local dish). Instead of incorporating the peppers, I think I may have just made a chipotle mayo with them, using just the liquid from the canned peppers. In fact, I’m 99% sure that’s the case. It allows better control of the heat and removes some of the moisture from the bean mix. They were very tasty, just difficult to keep in one piece. You really have to pack them to get something that resembles a burger and won’t end up as filling for a taco.
You might try starting with one can of drained beans and experiment with quantities on the crumbs and egg. Good luck.
