Vodka Infusion....Summer Time

Hey,
I have a question about infusing vodka. I bought one of those neat jars with the spout, like you see at bars, but now I’m lost. I know that the idea is to soak the pineapple pieces in the vodka, but how much pineapple? Anyone have a clue? I know this is a trial and error thing, but the jar can hold a lot of vodka, and it’s not as cheap as water so I’d like to have a handle before I start.

It’s like making coffee - it’s best to err on the generous side, because you can ‘water’ it down with straight vodka if the infusion is too strong. Although I don’t see how even a lot of pineapple will overpower vodka :wink:

Also a good one to do is chilli vodka - makes the best Bloody Marys :slight_smile:

How long do you need to soak the pineapple before the flavor fully passes into the voodka? Mixology is not one of my areas of expertise at all, but I had a Hawaiian martini a couple of weeks ago that really blew me away…

I have found that if you infuse your spirits for a couple of weeks, you’ve got something with some flavor to it. With chilis, you can adjust the heat by mascerating for a shorter or longer period. Any longer than three weeks is probably contraindicated. If it hasn’t done it by then, it ain’t gonna. :smiley:

Not sure if this will help you or not, but a good rule of thumb is to pretend you’re infusing a bottle of water that you’re planning on drinking, plus a little extra since you’re probably going to end up diluting the infusion with ice or some other mixer later. How much would you add then? And remember, you’re infusing, not mixing.

So, for pineapple you could fill the whole bottle with pineapple, (especially if you’re going to make martinis) then pour the vodka over it.

For something like hot pepper, how much would you add to a bottle of water? One, two, three? You wouldn’t want to fill the bottle with hot peppers, you’d end up with something hotter than tabasco sauce.

Now what you do is get someone hooked on multi-coloured skittle vodka, then give them a glass of sewage and tape the results.
