Begin with a pack of that muffin mix they sell at the grocery store. Blueberry muffins, strawberry muffins, mixed berry muffins, apple cinnamon muffins, chocolate chip muffins… doesn’t matter. Just go with what looks good to you.
But instead of making muffins, heat up the waffle iron. Spray with nonstick cooking spray. Mix the muffin mix, but add a little milk to thin it to the consistency of pancake batter.
Then use it as waffle batter, and pour it into the waffle iron, about a third to a half of a cup per waffle.
Serve with or without syrup. Butter or margarine is nice.
I did this to my wife, but carefully concealed the discarded mix packages. She’s still wondering whatthehell I made those waffles out of…
I often use muffin mix for pancakes. Works great. My son is especially fond of those cheap Jiffy brand corn muffin mixes made into corncakes. My husband’s favorite is blueberry muffcakes. Mine is apple-cinnamon muffcakes with applesauce and cinnamon on top (I also use applesauce in the mix instead of oil, to cut the fat content.)
With the Jiffy Corn Muffin mix, the thing to do is to add a can of creamed corn to the mix before making the muffins. My daughter generally doesn’t eat breakfast, but she’ll get up for those.
Can’t say I’ve ever made waffins or muffcakes. I have, however, made quiches with crepes as the crust.
It was an interesting experiment. They did not end up looking at all like the ones in the picture–my crepes weren’t stiff enough or something. Also, I poured the egg/milk mixture rather unevenly into my crepe cups. And, they didn’t want to come neatly out of the muffin tins, so the first ones were tasty, but not very decorative. The second half dozen came out of the pan much better. Also, they reheated nicely.
I don’t think I will fix them again, though. Too much effort for the result.
Of course, it didn’t help that the phone kept ringing. Half way through the process of cooking the crepes, the phone rang with a job offer. As I worked to assemble the quiches, the phone rang again–someone I’d called to tell about my job offer was calling back.
So I don’t regret it, but I don’t know that I’d try it again. Unless my next job search gets really desparate . . .
