Watermelon sorbet ! - question: can I cook the juice down to concentrate the flavor

before putting it in the ice cream maker? Or will it have a ‘cooked’ taste?

If anyone is around today, please give me your opinion quick!

Probably tastes cooked. Raw juice works well. Maybe a little delicate if it’s not super ripe. You may want to augment it with something else, like lemon juice.

I’ve read to do that, or add mint, or chocolate chips for seeds.

Well, thanks, I was all set to turn on the stove and a little voice said, hold on…

If it doesn’t work out, I have a ton more watermelon to experiment with!
